Carrot “noodles”
Carrots: Inexpensive, nutritious, delicious, and a source of starch/carbs that substitute for grains. And easy to prep (who else hates getting dirt off of spinach?)! For those who want to watch their calorie/carb intake, it is particularly good as it fills you up on few calories, in addition to being higher in micronutrients and fibre. In this video, I used 495g (over 1 lb) of raw carrot, which has only 203 calories!
Ingredients:
- Carrots
- Avocado oil (or other cooking oil)
- Salt and other seasonings. I used @leeapproteins seasoned cricket powder and cayenne pepper.
- Ground beef (got mine delivered to my door by TruLocal).
A spiralizer might work too, but those take up way more space, are more tedious to operate, and don’t always work on harder items.
Note: Lower calorie/carb doesn’t necessarily mean healthier, it is just helpful if you’re watching your weight.
